Chuy's, Eat Your Heart Out

I know, I know.  This is almost blasphemous, but it's what the husband had to say in response to dinner tonight.  Found another keeper recipe!  I made yet another new enchilada recipe (can you really have too many of those?) and he said it rivaled Chuy's famous Chicka Chicka Boom Boom, which if you haven't had, you should!  Sadly, the last time I had it I was most pregnant with Caleb.

Anyway, this recipe comes from the 5 Dollar Diners site so it has an added bonus in that it is very inexpensive.  Okay, triple bonus because it was quick and easy too!  And lucky for you, I'm going to share.

Cheesy Green Chicken Enchiladas
2 cups chopped, cooked chicken
1 - 8oz pkg cream cheese, cubed
1/2 cup diced tomatoes  (I put in a 15oz can of petite diced - yum!)
1/2 tsp ground cumin
1/4 tsp garlic powder
1/4 tsp onion powder
8 - 6" tortillas
1 large can green enchilada sauce (I had green salsa and used that instead)

Stir chicken, cream cheese, tomatoes, and seasonings in saucepan over low heat until cheese is melted.
Spoon 1/3 cup mixture in each tortilla.
Put in lightly greased 8x12 dish (I used my 11x13).
Pour sauce over all, cover with foil.
Bake at 350* for 20 minutes or until heated through.
*I also sprinkled a little shredded cheese on top.

YUM!  And, we have leftovers.  Cook once, eat twice!

I will have to try this. Nathan's favorite dish at Chuy's (which just opened up a mile from our house - woo hoo!) is the chicka chicka boom boom. Thanks!
